During the Exodus from Egypt, the Israelites left in such a rush that they did not allow their bread to rise. Therefore, on Passover, Jews are not permitted to eat leavened bread for the entire eight-day holiday. For baking, Passover means that we cannot use flour or yeast, but there are so many other fabulous ingredients we can work with to create delicious desserts. Many of the desserts we eat on Passover are gluten-free.

How to plan

When you are planning holiday menus, make sure to include what you plan to bake for the holiday and make your shopping list. Bake some cookies as soon as the holiday starts and your family will begin Passover in a joyous frame of mind.
