Ingredients

 

  • 3 medium ripe bananas, mashed in a medium bowl
  • 3/4 cup (1 ½ sticks) butter, at room temperature
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 ¾ cups all-purpose flour
  • ¼ cup oat bran
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • ½ cup milk
  • 5 tablespoons oats

Preparation Directions

Preheat oven to 350°F. Place the butter and sugar in a large bowl and beat with an electric mixer or whisk until creamy. Add the mashed bananas, eggs and vanilla and mix well. Add the flour, oat bran, baking soda and salt and mix again. Add the milk and mix until combined.

Use a ½ cup measuring cup and scoop up a heaping half-cup and pour into each muffin cup. Bake for 25 minutes or until a skewer inserted in the center comes out clean. May be frozen.
