Ingredients
2 cups sugar
2 cups all-purpose flour
3/4 cup parve unsweetened cocoa
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup orange juice, without pulp
1/2 cup canola or vegetable oil
1 teaspoon pure vanilla extract
3 large eggs
1 cup boiling water
Spray oil containing flour or spray oil plus 2 tablespoons flour for greasing and flouring pan
Preheat the oven to 350ºF. Grease and flour a Bundt pan.
In a large bowl, mix together the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the orange juice, oil, vanilla, and eggs and mix for 2 minutes, until everything is thoroughly combined. Add the boiling water in 3 parts, gently mixing it in with a silicone spatula or wooden spoon (if you use an electric mixer, be careful, the water splatters)
Pour into the prepared pan and bake for 50 to 60 minutes, or until a skewer inserted in the cake comes out clean. Let cool for 10 minutes in the pan and then turn the cake out onto a rack to cool to room temperature.
